			<p style="text-align: justify;">Открихте ли си вече тихо местенце, да седнете на сянка, скрити от горещите лъчи? Книга, ухание на рози и шезлонг са наистина примамлива гледка, но когато до тях в кристално студената чаша се крие свежа домашна лимонада с мента и малини, вече наистина бихме могли да си отдъхнем с наслада.</p>
<p style="text-align: justify;">Използвам стара рецепта за турска лимонада. Преди години, колежка от Истанбул ми сподели, как всяко лято майка й я приготвя и сервира на сянка в градината. Записах си рецептата с надежда да я опитам някой ден, и от тогава е незаменима част от всяко лято.</p>
<p style="text-align: justify;">Джин, тоник, мартини, сироп от бъз… Толкова много са разнообразните коктейли в който бихте могли да я сервирате.</p>

			<p>1. Настържете кората на лимоните на средно ренде.</p>
<p>2. Смесете в тенджерка половината вода, настърганата кора от лимон и захарта. Загрейте и разбъркате всичко на слаб огън за около 10 минути, докато захарта се разтопи. Дръпнете на страна и оставете лимонадата да изстине.</p>
<p>3. Разрежете всеки лимон на две и изстискайте сока. Прибавете към лимонадата останалата вода, прясно изстисканият сок от лимон и три стръка с листа от мента.</p>
<p>4. Покрийте тенджерата с капак я поставете в хладилника за една нощ.</p>
<p>5. Прецедете с много ситно сито лимонадата и премахнете корите и ментата.</p>
<p>6. Сервирайте с бучки лед, пресни малини и свежи листа от мента.</p>

			<p style="text-align: justify;">Веднъж опитали, никога не бихте могли да забравите вълшебната омая на мароканската кухня. От сладки десерти, до ароматни таджини – всичко е вкусно! За щастие, бихте могли да приготвите със завидна лекота повечето рецепти у дома. Не е необходимо да имате керамичен таджин. Да, атрактивно е, но и в обикновена тенджера ястията се получават.</p>
<p style="text-align: justify;">Днес приготвям една от най-любимите ми рецепти – агнешки таджин с фурми и бадеми. Истинска кулинарна магия е да се украси агнешкият вкус с подобаващи, допълващи аромати. Арабската кухня, прави умело именно това! Агнешкото месо в случая е задушено с приятните аромати на джинджифил и канела, и потопено в сладостните ухания на мед и фурми. Комбинацията е неустоима!</p>
<p style="text-align: justify;">Сервирам таджина върху сварен марокански кускус, който попива ароматните сокове. А, самият таджин, аранжирам със запържени бадеми и допълнително фурми.</p>

			<p>1. Загрейте в дълбока тенджера кравето масло и олиото. Прибавете агнешкото месо, предварително накълцано на бучки. Гответе на силен огън за около 10 минути, докато месото покафенее.</p>
<p>2. Прибавете нарязаният на ситно лук, нарязаните фурми, овкусете със сол, смлян черен пипер, джинджифил и канела. Разбъркайте всичко и залейте с гореща вода. Покрийте с капак, и гответе ястието на тих огън за около 1 час и половина.</p>
<p>3. Щом е готов, овкусете таджина с две лъжици мед.</p>
<p>4. Загрейте няколко капки олио в малък тиган и прибавете бадемите. Запържете ги за около десетина минутки, до придобиване на лек загар.</p>
<p>5. Сервирайте таджина върху сварен марокански кускус, поръсен с пресен магданоз, пържени бадеми и фурми.</p>

			<p>1. Залейте в дълбока купичка една чаша булгур с гореща вода. Покрийте с капак и оставете булгурът са набъбне за половин час. Изцедете водата.</p>
<p>2. Обелете и нарежете шалота и скилидката чесън на ситно. Загрейте малко зехтин в един тиган и запържете чесъна и лука до златисто. Премахнете в отделна чинийка и дръпнете на страна.</p>
<p>3. Измийте и нарежете гъбите на дребно. Запържете ги в същият тиган. При необходимост добавете зехтин. Овкусете със сол, смлян черен пипер и няколко стръка мащерка. Щом гъбите придобият лек загар, залейте ги с малко балсамов оцет и бъркайте за минута докато се изпари. Извадете гъбите и ги оставете в отделна чинийка.</p>
<p>4. Прибавете булгура в тигана и овкусете със сол и смлян черен пипер. При необходимост добавете зехтин. Запържете булгура за около 5 минутки, докато леко изсъхне и започне да се оцветява в златисто. Прибавете лука и чесъна. Прибавете гъбите и разбъркайте. Натрошете половината сирене и объркайте всичко заедно. Щом сиренето се стопли и започне да омеква извадете ястието от тигана и сервирайте в отделни чинии.</p>
<p>5. Поръсете всяка порция с пресен магданоз и допълнително натрошено сирене.</p>

			<p style="text-align: justify;">Личи си, че съм на диета, нали? Малко олекотявам ястията в къщи, потапяйки се в ароматният свят на веган и вегетарианските ястия. Днес черпя вдъхновение от арабската кухня и приготвям печен карфиол сервиран с изключително вкусна разядка/сос „Мухамара“.</p>
<p style="text-align: justify;">Приготвя се от печен червен пипер и орехи. В оригиналната рецепта се използва меласа от нар, но лесно я заменям с малко сок от изцеден лимон и мед. Сосът е сладко-кисел и пикантен. За дълго остава да гали небцето и подхожда, както на зеленчуци така и на риба и месо. Напомня на испанският сос „Ромеско“!</p>

			<p>1. Измийте и нарежете на цветчета карфиола. Поставете го в дълбока купа и го залейте с малко зехтин, къри на прах, червен пипер на прах, чесън на прах, сух магданоз и настърган Пармезан. Объркайте всичко и го изсипете в тавичка.</p>
<p>2. Печете за около 20-30 минути на 200г във фурната, или докато карфиола омекне и придобие лек захар.</p>
<p>3. Изпечете и обелете червените чушки.</p>
<p>4. Блиндирайте орехите. Прибавете печените, обелени чушки и малко зехтин. Блиндирайте до гъста каша. Прибавете чесъна, трохите, доматеното пюре, сока от лимон и меда и блиндирайте. Овкусете с кимион и кайенски пипер и при необходимост разредете с още зехтин и объркайте всичко.</p>
<p>5. Сервирайте карфиола поръсен с пресен магданоз, щедри лъжици сос „Мухамара“ и салата от краставички.</p>

			<p>1. Измийте, срежете на две и почистете камбите. Сложете ги в купа подходяща за микровълнова фурна с малко вода, затворете с капак, и ги поставете да се сварят за около 14 минути на 750 вата.</p>
<p>2. Сложете сварените камби в една тавичка. Напълнените ги с малко песто, колбас и късчета моцарела. Сложете ги във фурната на грил за около 10 минути, толкова колкото само да се разтопи и запече моцарелата.</p>
<p>3. Сложете една чаена чаша кускус и една чаена чаша вода в съд подходящ за микровълнова фурна. Поставете съдът, затворен с капак на 750 вата за 3 минути, колкото да набъбне кускусът. Извадете го и оставете на страна да изстине.</p>
<p>4. Направете салатата, като смесите в дълбока купа кускусът, ситно нарязани чери домати, и ситно нарязан пресен магданоз и мента. Овкусете със зехтин, сок от прясно изстискан лимон, сол и смлян черен пипер.</p>

			<p style="text-align: justify;">Плоските хлябове носят със себе си толкова много древна история. Още от прадедите ни, открили брашното за първи път и оформили плоски питки на огъня, нещо сгрява душата, когато в ръцете ни пари горещ хляб. Плоският хляб обикаля цялото земно кълбо. Дали това ще са арабски пити, марокански хлябове, римски плосък хляб или тънките мексикански тортили, всяка нация носи в кулинарното си съзнание спомени за подобен хляб. В България имаме нашите пърленки. Но, днес не приготвям от тях, а се уча чрез книгата на Пол Холивуд на правя арабски набухнали плоски пити. Режат се на две и джобчетата се пълнят с късове месо и зеленчуци. При първата набухнала пита в кухнята избухват победоносни викове. При втората, съпругът ми прошепва „Браво“ с нежно ръкостискане. Гордо се отправяме към всекидневната да опитаме вкусните гозби. Само една хапка е достатъчна, за да се убедим, че ще ги приготвим отново.</p>

			<p>1. Сложете брашното в голяма купа и добавете солта от едната страна на купата и маята от другата. Добавете семената, налейте 120 мл вода и добавете 2 супени лъжици олио. Смесете съставките заедно, като използвате пръстите на едната ръка. Добавяйте малко по малко останалата вода, докато получите гладко, меко тесто и абсорбиращо всичкото брашно от стените на купата; може да не се нуждаете от цялото количество вода.</p>
<p>2. Налейте малко олио върху работна повърхност и поставете тестото върху него. Месете 5-10 минути или докато получите гладко, еластично тесто.</p>
<p>3. Когато тестото стане меко, гладко и еластично, оформете го на топка и поставете в леко намаслена купа. Покрийте с кърпа и го оставете да втаса, докато тестото удвои обема си, поне 1 час.</p>
<p>4. Междувременно загрейте фурната си до 225°C и поставете вътре една тава за печене, за да се загрее.</p>
<p>5. Изсипете тестото върху леко набрашнена повърхност и месете, като сгънете тестото многократно, докато целият въздух изчезне. Разделете тестото на 4-6 части и ги оформете на топки. Сплескайте всяка топка с върха на пръстите си, след това я разточете на овал с дебелина 5 мм-1 см.</p>
<p>6. Извадете горещата тава от фурната, поръсете с брашно и сложете питите. Печете за 5–10 минути, докато хлябовете набухнат и просто започнат да придобиват кафеникав цвят. Повторете с останалите хлябове.</p>
<p>7. Сервирайте, като разрежете питите на две и напълните всеки джоб с късчета месо или зеленчуци.</p>
